As sugar prices rapidly declined due to the manifold increase in importations from the Caribbean, its use expanded in many dishes. Not everyone was pleased with the addition of sugar in ketchup. Most British tomato ketchup recipes did not include it. Even in America as late as 1944 Kenneth Roberts reported that in Maine a sweetened ketchup among some families was "regarded as an offense against God and man, against nature and good taste."
