Many of the [XVIth century] Portuguese seamen who shipped out to Asia with nothing more than the shirt on their back, brought along a jar of marmalade. Vasco da Gama carried marmalade on his landmark voyage to India and served it to bemused natives on the coast of Africa, who had to be shown how to spread it on bread.

Это где-то в Сомали было, скорее всего. Там вроде бы есть как минимум лепешки из пшеницы, похожие на эфиопскую инжеру (инжеру канонически пекут из теффа).

Думаю, экзотика мармелада состояла скорее в апельсинах, чем в способе приготовления, так как упарить (или утушить) что-то до безобразия - это один из основных способов африканской готовки.

don't think africans met by v.da gama had anything remotely similar to what was available in portugal of the time

as to marmalade and sailors adherence to their food habits: I suspect jams and marmalade, as well as salted fish and meats were a necessity for maritime travel, not a personal quirk
